Job Description: Job Description:The Executive Chef will oversee the operation of Spanish Bay kitchens and the development of staff to ensure the presentation of fine cuisine in all outlets, banquets, and special events.Company Background:For over a century, friends and family, celebrities and athletes, world travelers and locals alike, have flocked to Pebble Beach Resorts. - Oversee the operation of all kitchens
- Hire, schedule and develop and motivate managers and staff to meet and exceed established food preparation standards
- Control payroll by reviewing and establishing standards for staffing.
- Oversee the Stewarding team and their financial responsibilities (staffing guidelines, operating equipment expenditures, etc.)
- Establish well defined recipes and discuss ways of improving cuisine.
- Display exceptional leadership by providing a positive work environment.
- Provide regular recognition of staff and their performance (Bravos, EOQ, encouraging emails, birthdays, anniversaries)
- Delegate as appropriate to develop executive and sous chefs to accept responsibility and meet defined goals.
- Ensure your chefs personally meet with guests in the restaurants (table touching)
- Conduct kitchen tours, cooking demonstrations and respond to written guest requests in a timely and professional way.
- Work closely with CCS to ensure responses and prompt and everyone is aware of their status
- Oversee the menus, taste and presentation of food in the restaurants, banquets and employee dining room.
- Control food costs with Chef de Cuisines by proper planning and utilization of monthly abstracts to monitor costs.
- Assist in the preparation of budget and break down of monthly profit/loss statements.
- Submit monthly and YTD P&L reviews within five days of posting of P&L
- Work closely with the Purchasing Department to obtain highest quality products at best prices.
- Ensure that all federal, state and local health and safety standards are consistently adhered to.
- Develop new menus seasonally and implement seasonal QUAL’s when appropriate.
- Conduct personnel performance reviews and evaluations of management staff and oversee your Chef’s reviews.
- Meet with Chefs weekly to review Exec notes and upcoming business. Attend Exec and Food & Beverage meetings.
- Attend 8:30am and 5pm operational meetings when available
- Conduct and ensure Chefs hold quarterly meetings with their staff to cover resort information and kitchen issue
- Comply with all Pebble Beach Company safety and health policies and procedures.
- Meet with key clients and assist with tastings and menu planning as needed.
- Assist with Special Events as needed.
- Projects and responsibilities as assigned by General Manager and Hotel Manager.
Required Skills:
- Graduate of accredited culinary program or apprenticeship under highly respected chef at a premier resort or hotel property.
- Certification by the American Culinary Federation required and certification as an executive chef preferred.
- Valid California driver’s license.
- Excellent cooking and kitchen management skills.
- Experience in stations as Chef de Partie, Sous Chef and Executive Sous Chef, plus knowledge of Pastry, ice sculpture, Garde Mange and show pieces.
- Broad knowledge of varied cuisines and ability to integrate regional ingredients to menus.
- Thorough knowledge of sanitation.
Desired Skills:
- 15 or more years of prestigious (four diamond level) resort or hotel experience with minimum 5 years full responsibility as Executive Chef.
